Schüsslkas
Bowl cheese: a Berchtesgaden specialtySchüsslkas (bowl cheese) is a cheese made from skim milk, containing less than 1 percent fat. Today, it is produced almost exclusively in the southeastern Bavarian Alps—especially on the alpine pastures around Berchtesgaden.
Schüss'lkas used to be produced in the nearby alpine pastures of Reit im Winkl and Ruhpolding as well. In neighboring Austria, particularly in Pinzgau and Tyrol, a similar cheese is produced—known as the famous Graukas.
