The inn specializes in Bavarian-Austrian cuisine, and in addition to the food, the Unterstein also places particular emphasis on the drinking culture. The origins of the Grassl gentian distillery
The Grassl gentian distillery has its origins in Unterstein. In the early 17th century, the Grassl family received the documented Kranebitt right (Kranebitt is an old word for juniper) from the prince princes, the spiritual and secular lords of Berchtesgaden. Documents testify that in March 1692 the Unterstein innkeeper Grassl was granted the right to distil juniper, gentian and masterwort. The documents with the "Hütten-, Holz-, Wasser- und Brennrecht" (right to distil juniper, gentian and masterwort) can be found in the Bavarian Main State Archives and allow the descendants of the Grassl family to distil juniper from the Berchtesgaden National Park and the Berchtesgaden Alps right up to the present day.
