The 2 Michelin-starred restaurant at the Kempinski Hotel Berchtesgaden has had a new design - and a new name - since the start of 2020: PUR. The name lives up to its promise: PUR offers fine dining at the highest level in a relaxed atmosphere. The product is the star. Chef Ulrich Heimann presents his new creations with pure, unadulterated taste, light, tasty and surprising - far removed from what we know and expect. In terms of design, PUR moves between flattering restraint and atmospheric serenity. Calm colors, expressive materials, their careful processing and an appealing lighting situation underline the atmospheric architecture.
Star chef Ulrich Heimann
Ulrich Heimann grew up in the Black Forest, where he also laid the foundations for his career. Heimann moved to the "Prinz Frederik Room" in Hamburg in 1992, where he earned his first Michelin star in 1995. Since 2005, the passionate mountaineer has been responsible for the current PUR, formerly Le Ciel, in Berchtesgaden. Heimann was awarded a star for the gourmet restaurant in 2006, which he has successfully defended ever since. "For me, PUR stands for pure passion, pure culinary art and a love of the product. I am proud to run such a great restaurant and look forward to bringing the new design, the space and the concept to life together with my team," says Ulrich Heimann. In 2024, the passionate chef will receive a second Michelin star.
Heimann impresses his guests with his pure and artisanal style of cooking. His main focus is on regionality and innovative lightness. His strong connection to and respect for nature is also reflected in his free time, which he spends in the mountains. He finds inspiration in hiking, climbing and ski mountaineering. "Spending time in the mountains is important for me to stay fit and maintain a balance between my professional and private life," he says. He also uses the peace and quiet he gains in the mountains and his confidence in teamwork in his job. "Cooperation is crucial in the kitchen and makes each individual strong."
Design and architecture: ELEGANT CONSISTENCY AND SPECIAL ACCENTS
Architect Klaus Sporer is responsible for the new timeless design, which exercises flattering restraint and places Ulrich Heimann's creations and his guests in the foreground. With its grey-based color scheme, natural materials and sophisticated lighting concept, the restaurant offers an elegant setting for the presentation of the food and leaves room for the optimal presentation of the people involved. Lush decorative elements have been dispensed with; instead, all the delicate nuances of color in the dishes served set special accents against the grey background. The centerpiece of the redesigned restaurant is the chandelier, which is entwined with a golden arrangement. The concept impresses with its calm, simple design and yet offers plenty to discover when looking around the circular room. The surfaces of the materials used range from rough and matt to smooth and high-gloss, and the walls were also given a lively look using a special technique: A powdery copper pigment was sprinkled into the plaster, which responds with different colorations depending on the lighting and creates a warm, feel-good atmosphere.
The "box": FOR SPECIAL MOMENTS
An architectural highlight of the restaurant is the "Box", a separate room made of finely grained silver fir. It was created especially for couples who want to celebrate a special moment. For atmospheric evenings, the separée can be bathed in a warm light that is reminiscent of the setting sun or the full moon, depending on the color scheme.
Culinary delights: PURE TASTE AND LIGHT ENJOYMENT
The pure idea is also continued in the cuisine: in his new creations, Ulrich Heimann dispenses with the use of many spices, instead using mainly salt and pepper and focusing on the original taste of the product, prepared with passion and lightness. The result is an unadulterated pleasure, captivatingly simple and sophisticated at the same time. The creative cooking style is based on modern European cuisine that focuses on the harmony of textures and the intrinsic taste of the highest quality ingredients. Heimann not only maintains close contact with his guests, but also with producers and suppliers from the region. Meat, dairy and fish products are all sourced from nearby suppliers. The menus themselves are astonishing in their deliberately simple, often almost simplistic names such as "Alps" or "World". But it is the combinations and interpretations of seemingly everyday dishes that really surprise. And the enjoyment is a pleasure!
Chef's Table: AN EXCLUSIVE LOOK BEHIND THE SCENES
A front row seat: the Chef's Table in head chef Ulrich Heimann's kitchen was also redesigned as part of the renovation work and gives guests an exclusive look behind the scenes, where they can peek over the chef's shoulder: Ulrich Heimann prepares a "menu du chef" in front of them, which he then serves personally. The Chef's Table can be booked as an extraordinary dinner location for corporate events or private celebrations on a small scale. The two tables offer space for four to eight people.

The picturesque location on the Obersalzberg with its fantastic mountain panorama is enough to tempt you! But the gourmet restaurant at the luxurious Kempinski Hotel Berchtesgaden has much more to offer. On the one hand, there is the chic interior: with high-quality materials, clear shapes, elegant shades of gray and brown and a striking chandelier, an extremely attractive, modern, minimalist yet warm design has been created. The kitchen by Ulrich Heimann is also impressive. He puts a modern twist on classics in an extremely precise and harmonious way. In his seasonal menu, he skillfully focuses on the product. You can also enjoy very friendly and well-trained service - including good wine advice. On beautiful summer days, you can of course sit out on the wonderful terrace!
